Tondekayi Palya ( Kundru ki sukhi sabzi)

 Today am sharing and simple recipe of Kundru which is called Tondekayi in Kannada. Its very easy to make and requires very little ingredients. Tondekayi is very good for diabetic people as it helps in lowering blood sugar levels. (Its called as dondakayi in Telugu, Kovakka in Malayalam and Kovakayi in Tamil.)

Preparation time:- 20 mins
Cooking time:- 20 mins
Serves 5-6 people

Ingredients required:-

  • Half kilo of tender Kundru ( break and see the seeds, if its transparent then its tender and if red then it developed and does not taste good)
  • 1/4 cup of grated coconut (fresh)
  • 2 tspn of refined oil
  • 1 tspn of Cumin seeds( Jeera)
  • 1 tspn of Mustard seeds ( Rai)
  • 1 tspn of turmeric powder
  • 2 tspn Sambhar powder or red chilly powder
  • 5-6 roughly chopped curry leaves
  • 2-3 whole red chilly ( broken into 2)
  • a pinch of asafoetida (Optional)
  • Salt as per taste
  • 1 tspn of sugar or Jaggery
  • 1 tspn of thick tamarind pulp or amchoor powder
Procedure to make:-
  • Wash and pat dry the Kundrus and leave them under fan to dry.
  • Now cut into circles or longitudinal stripes.
  • Heat oil in a saucepan and when heated add cumin and mustard seeds along turmeric powder,asafoetida, roughly chopped curry leaves and whole red chilly.
  • Once the mustard crackles add the chopped kundrus and mix well and cover and cook for 15 mins on a medium flame.
  •  Keep checking in between and stirring occasionally prevent from sticking to bottom of the pan.
  • Once the kundrus are cooked add sambhar masala powder or red chilly powder, grated fresh coconut,Tamarind pulp or amchoor powder,salt as per taste and mix well.
  • Finally before turning heat add a tspn of sugar or jaggery and serve hot.



Note:-
Addition of a tspn of sugar/jaggery to a spicy dish enhances the spicy flavor of the dish.
